Does anybody know if bookies pay out using the odds printed on the coupon? I'm not talking about huge bets – just five or six singles with <= £100 staked in total on the coupon.

Not if there has been a price change on the match, Ladbrokes system will automatically change the price as the bet goes through and the change will be displayed correctly on your ticket. The other printed coupons that just photocopy what is on the slip they should tell you at the time of the bet there has been a change.
Sometimes the staff don't have a clue and forget to tell the customer of the change, this shows up when the bet is put into the system and you will only be paid at the price that was available at the time the bet was struck and not just whats on the coupon.
All bookies have a 'nickname' for punters who place decent size bets and or win regularly, so they will put you bet against that so all staff know, All the systems are linked up and if your bets are similar teams and stake, change them!, under 50 is safe.......over that 'big brother' will await you.
Tried placing some bets: it seems that Lbrokes do indeed have a sophisticated OCR* system at their tills, sucking in the most up-to-date prices from a database at HQ and next door at Coral's they cheerfully snapped up my £80 only to then say "oh, the price has just changed".
Got my money back and scuttled back to betfair.
Now I need to figure out how to put to good use the time I spent investigating these darned coupons.
