Betfair, balanced book?

Hi,

Probably a very stupid question but how do Betfair keep a balanced book? I have just started so spent a while just trying to figure out how it all works. I sometimes see the favourite drift and the book percentage goes to around 100.1% but never below...

How can an unbalanced book occur then:

I would have thought that cross matching prevents such situations.

The book isn't going to be balanced all the time in running, even with cross matching.
